MOJITO

Serves 1

3 fresh mint leaves

1 tablespoon Simple Syrup (recipe follow)*

1 ½ ounces light Bacardi or Havana Club rum

2 tablespoons fresh lime juice

Club soda

Preparation

  1. In a small bowl, mix two of the mint leaves with the syrup. With the back of a spoon, press the leaves to release their essential oils. Pour into a cocktail shaker filled with ice cubes.
  2. Add the rum and lime juice. Shake 5 times. Strain into a highball glass filled with a few ice cubes. Pour in the club soda to fill and garnish with the remaining mint leaf.

*Simple Syrup

Makes About 1 Cup

1 cup sugar

1 cup water

  1. In a small, heavy saucepan, mix the sugar with the water. Bring to a boil over medium-high heat, stirring, for about 1 minute, or until the sugar dissolves and the syrup is clear.

  1. Remove the pan from the heat and let the syrup cool to room temperature. Transfer to a glass jar with a tight-fitting lid and refrigerate. The syrup can be refrigerated for up to 1 month.
