CHEFS AT HOME WILL IMPRESS WITH TREVI ITALIAN RESTAURANT’S RECIPE FOR TUNA TARTARE

TREVI Italian Restaurant Executive Chef Peter Scaturro has developed a menu that’s creative, diverse and filled with recipes from Italy. From appetizers and brick oven fired pizzas to entrees and desserts, Scaturro’s team “cooks up” a menu that’s second-to-none. A recipient of the Chef of the Year Designation from Morton’s Restaurant Group, Inc., Scaturro is sharing his recipe for TREVI’s Tuna Tartare.

“TREVI’s Tuna Tartare is a popular appetizer, and it makes for a nice presentation,” said Scaturro. “For those at-home chefs, TREVI has provided a recipe for the Tuna Tartare that’s great for special occasions or parties. Guests will be impressed with the look of the dish, as well as how delicious it is.”

Below is the recipe for TREVI’s Tuna Tartare.

TUNA TARTARE

  • You’ll need a medium-size ring mold for this recipe.
  • 3 ounces #1 grade Sashimi Tuna
  • ¼ tsp. shallots
  • ¼ tsp. orange zest
  • 1 1/8 tbsp. sesame oil
  • Pepper according to taste
  • Salt according to taste
  • ¼ ounce mixed micro greens
  • ½ ounce Tabiko Wasabi Caviar
  • 1 tbsp. balsamic reduction
  • 2 ½ ounces avocado
  • ¼ tsp. lemon juice
  • ½ tsp. Roma Tomato diced
  • 1/8 tsp. black sesame seeds
  • ½ tsp. rice wine vinegar
  1. Cut shallots into small mince.
  2. Prepare orange zest.
  3. Dice tuna into ¼ inch dice.
  4. In a mixing bowl, mix tuna, rice wine vinegar, shallots, orange zest, 1 tbsp. of sesame oil, lemon juice, salt and pepper.
  5. Place ring mold in center of 10-inch round plate.
  6. Dice avocado into 1/4 –inch dice and place at the bottom of ring mold.
  7. Add tuna to ring mold.
  8. Top off tuna with Tabiko Caviar and remove mold.
  9. Mix 1/8 tsp. oil with micro greens and place on top of Tabiko.
  10. Garnish plate with balsamic reduction, diced tomatoes and black sesame seeds. Serve immediately.
