CHEF MATEO PEREZ’S INSALADA BERTOLINI’S IS A TREAT FOR THE EYES AND TASTE BUDS

LAS VEGAS – Bertolini’s Authentic Trattoria serves a wide variety of Italian specialties, including healthy salads filled with fresh-picked produce and quality ingredients. Choose from tasty salads, such as Caprese, Traditional Caesar, Italian Chopped, Tuscan Tuna, Seafood, Mediterranean and Insalada Bertolini’s. The Insalada Bertolini’s, which is filled with wholesome vegetables and tender pieces of chicken, has become a favorite of guests and Chef Mateo Perez, the creator of the dish.

“Chef Perez likes to work with different ingredients and make new entrees, salads and specialties, which always become favorites of our guests,” said Brandon Bueltel, general manager of Bertolini’s Authentic Trattoria. “The chef has helped to create many of the restaurant’s menu items, including the Insalada Bertolini’s. Every dish that comes out of the kitchen is appealing to the eye and tastes exceptional – and it’s always a bonus that our foods are healthy, too.”

Perez is especially proud of the Insalada Bertolini’s, which is a popular menu item. For those hot summer days, choose a crisp, refreshing salad while relaxing in the restaurant or pick up a favorite Bertolini’s salad or entrée with the take-out service. INSALADA BERTOLINI’S

INGREDIENTS

3 ounces Fresh Baby Clean Spinach

3 ounces Chopped Romaine

3 ounces Grilled Chicken (julienne)

6 each Quartered Artichokes

8 each Roasted Button Mushrooms

3 ounces Pesto Vinaigrette

4 each Roma Tomato Wedges

PREPARATION

1. Place all ingredients in a mixing bowl (except tomatoes) and lightly toss.

2. Place salad in a chilled pasta bowl that achieves as much height as possible.

3. Place tomato wedges vertically with skin down at 3, 6, 9 and 12 o’clock.
